Ingredients
Crispy dough:
- 200 g of spelled flour
- 1 teaspoon baking powder
- 1 tablespoon cocoa powder
- 80 g of powdered sugar
- 1 vanilla sugar
- 1 pinch of salt
- 1 egg
- 100 g of softened butter
Charge:
- 150 g of melted butter
- 750 g cream cheese / cottage cheese
- 200 g of powdered sugar
- 1 vanilla pudding powder
- 3 eggs
- grated rind of two lemons
- 1 tablespoon cocoa powder
Glaze:
- 50 g of white chocolate
- 1 teaspoon of edible oil, eg sunflower oil
- 50 g of milk or dark chocolate
Preparation:
Sift flour with baking powder into a bowl. Add the other ingredients one by one and beat with a mixer into a smooth dough. Wrap in cling film and refrigerate for about 40 minutes. Take out the dough and shape it into a roll.
Place it in a greased mold, 26 cm in diameter, and press to form an edge 5 cm high. Melt the butter and allow to cool. Whisk the cheese with the sugar, pudding powder, eggs, butter and lemon zest into a uniform mixture.
Transfer approximately 2/3 of the mixture to the mold. Sift the cocoa and stir into the remaining mixture. Divide the dark mixture into the light and through both layers pull a fork in a spiral shape to create a marble pattern.
Place the oven on the lower level of the preheated oven at 170 ° C and bake for about 60 minutes. Leave the mold in the switched off oven for another 15 minutes.
If necessary, separate the cake from the edges with a knife and place on a cake tray. Slice the white chocolate and melt with the steamed oil, pour over the icing cake.
Thinly slice the milk or dark chocolate with a knife or grate it and decorate the cake.
